This is rice with shrimps and bell peppers, so it's perfect, since it contains yummy fish and it's super easy to prepare... it can be even enjoyed cold!
For this recipe is used garlic flavoured frozen shrimps and 3 small colored bell peppers.
Ingredients (2 people):
- 1 bag (about 180 g) frozen shrimps
- 200 g long-grain rice
- 1 big bell pepper
- 1/2 chili (mild or hot)
- 1 onion
- 1 garlic clove
- rapeseed oil or olive oil
- salt & black pepper
- finely chopped parsley
Wash the bell pepper, remove the seeds and chop it small pieces. Chop finely onion and garlic, remove seeds for the chili and cut it in half.
Warm up oil in sacepan and saute onion, garlic, bell pepper and chili. Cook for about 5 minutes stirring. At the same time boil the rice in salty water. When the rice is almost cooked, add the frozen shrimps in the saucepan and let it cook for other 5 minutes. Add salt and pepper up to taste.
When the rice is al dente, drain it and mix it with the sauce. Sprinkle chopped parsley on top.
