Joulutorttu – Finnish Christmas Tarts

Merry Christmas!!!!

The most traditional Christmas finnish sweet is the "Joulutorttu", aka Christmas tart.
It's an essential piece of the Xmas menu, along with the ham and the cassaroles.

I adore the joulutorttu because it's made with soft pastry and on top there's delicious plum jam. I love them so much that I make those tarts for every occasion (Easter, midsummer etc.), I just change the jam XD

  • ready made all-butter puff pastry
  • plum jam
  • 1 egg
  • icing sugar (optional)
Roll the pastry out until it's about 0,5 cm thick. Cut it into squares about 10 x 10 cm size.
Make 2-3 cm cuts in the middle of each corner.

Fold the edges towards the center of the tart and press down gently to hold them together.

Beat the egg in a bowl with fork until yolk and white are well mixed and brush it over the pastries.

Drop some jam in middle of the tarts.

Bake in 225°C pre-heated oven for about 15 minutes or until they get a nice golden color.
Sprinkle sugar on top if you like.

My favorite dessert. The strong coffee aroma that marries the sweet cream, the softness of the soaked biscuits, the final touch of the cacao.... An enormous amount of calories in just one spoonful!
Ladies e Gentlemen.... the TIRAMISÚ!!!

Ingredients (for 6 persons):
  • 250 g of mascarpone
  • 3 eggs
  • 100 g sugar
  • dry biscuits
  • strong coffee
  • cocoa powder

Put the sugar, 3 egg yolks and mascarpone in a bowl and stir well. In another bowl put 2 egg albumis and beat until it's foamy, add it to the mascarpone mixture. Whip the cream until the cream holds a firm shape.
On a side, make 3 cups of strong coffee and let it cool down. Take a container and start to pur a layer of cream. Lightly soak the biscuits in the coffee, one at a time and place them in one layer. Repeat the process. The last layer must be the cream.
Sprinkle with the cocoa powder and refrigerate for about 3-4 hours.
